May Altar

Many thanks to the TY students that helped to create the May altar and for putting fresh Bluebells on it each week. Many people create a small altar in their home during the month of May. The altar is traditionally dedicated to Mary, the mother of God as May is the Marian month when Catholics give special praise and honour to Jesus’ mother Mary, gifted to us as our mother too. May is also the first month of summer, so it comes to pass that altars which are created during this time are adorned with flowers that bloom at this time of year and with particular prayers, or items of devotion such as rosary beads to decorate this special space and to express our love and honour to Mary.

Super weather and an excellent day was enjoyed by TY1 & TY4 today on the Counshingaun Lake Walk. Absurdly picturesque, Coumshingaun looks like the sort of landscape that you’d find in a fantasy world video game or a Lord of the Rings-type film. Steep and rocky, it tested fitness but everyone managed. We stopped at the lake to take a breather for lunch and appreciated the magnificent panoramic views of the surrounding Comeragh Mountains. Many thanks to Mr Kelly and Ms McGann for accompanying the students.

Instead the Religion Department have organised an 'End of Year Thanksgiving Prayer Service' for each 6th Year class. St Monica’s Church looks beautiful and is where the Prayer Services will take place over the week.

Baldwins Farmhouse Icecream

Today it was entrepreneur Thomas Baldwin who joined our 3rd year Business Studies Class. This business is located in Knockanore, where rivers Bride and Blackwater meet in Co. Waterford. Baldwin’s Farmhouse Ice Cream is an on-farm enterprise. Thomas was keen to find a way to make use of the fantastic quality milk produced on his farm. Taking inspiration from small dairy farms in Europe, whilst travelling abroad to Europe in 2006, he became impressed by the idea of using his milk to create farmhouse ice cream. By combining fresh milk and cream from their dairy herd with other natural and local ingredients they have worked hard to create delicious homemade ice cream. Our class enjoyed hearing all about Thomas’s journey. Well done to Rebecca O Shea for organising the zoom call.
